Artifact Overview

Early on, baked beans were one of the most popular of the "57 Varieties" of the H.J. Heinz Company. After the cans were filled with baked beans, given a piece of pork, and filled with spicy tomato sauce, the cans were crimped and placed in sterilizing "retorts" -- pressurized containers that sterilized canned goods resulting in safer food and a longer shelf life.
