Many of us have been baking a bit more than usual while staying at home. So, let’s take look at how America’s favorite cookie, the chocolate chip, was born.

Before we get to chocolate chips, let’s talk chocolate. It’s made from the beans of the cacao tree and was introduced by the Aztec and Mayan peoples to Europeans in the late 1500s.  Then a dense, frothy beverage thickened with cornmeal and flavored with chilies, vanilla, and spices, it was used in ancient ceremonies.

Colonial Americans imported cacao from the West Indies. They consumed it as a hot beverage, made from ground cacao beans, sugar, vanilla and water, and served it in special chocolate pots.

In the 1800s, chocolate made its way into an increasing number of foods, things like custards, puddings, and cookies, and onto chocolate-covered candy. It was not just for drinking anymore!

Today, most Americans say chocolate is their favorite flavor. Are you a milk or dark chocolate fan? My vote? Dark chocolate.

Cookies were special treats into the early 1800s; sweeteners were costly and cookies took more time and labor to make. Imagine easing them in and out of a brick fireplace over with a long-handled peel.

As kitchen technology improved in the early 1900s, especially the ability to regulate oven temperature, America’s cookie repertoire grew.

Until the 1930s, baking chocolate was melted in a double boiler before being added to cookie dough. Check out this 1920 recipe for Chocolate Mousse from our historic recipe bank.   

Then came Ruth Graves Wakefield and the chocolate chip cookie. Ruth, a graduate of the Framingham State Normal School of Household Arts, had taught high school home economics and had worked as a dietitian.

In 1930, 27-year-old Ruth and her husband Kenneth opened a restaurant in Whitman, Massachusetts called the Toll House Inn. The building had never been a toll house, but was located on an early road between Boston and New Bedford. The restaurant would grow from seven tables to 60.

A quick aside: our 1820s Rocks Village Toll House in Greenfield Village. Early travelers paid tolls to use roads or cross bridges. This one collected fares for crossing the Merrimack River.

With Ruth Wakefield’s background in household arts, she was well-prepared to put together a menu for her restaurant. It was a great location. The Toll House Inn served not only the locals, but people passing through on their way between Boston and Cape Cod.

Over time, Ruth’s reputation grew, and the restaurant became well-known for her skillful cooking, wonderful desserts, and excellent service.  On the back of this circa 1945 Toll House Inn postcard, a customer wrote: “…down here two weeks ago & had a grand dinner.”

Ruth Wakefield, curious and willing to experiment, liked to create new dishes and desserts to delight her customers. The inn had been serving a butterscotch cookie--which everyone loved--but Ruth wanted to “give them something different.”

About 1938, Ruth had an inspiration. She chopped up a Nestle’s semisweet chocolate bar with an ice pick and stirred the bits into her sweet butter cookie batter.  The chocolate bits melted--and didn’t spread, remaining in chunks throughout the dough.

Legend has it that the cookies were an accident--that Ruth had expected to get all-chocolate cookies when the chocolate melted. One of those “creation myths?” A great marketing tale? Ruth was a meticulous cook and food science savvy. She said it was a deliberate experiment.

The marriage of sweet, buttery cookie dough and semisweet chocolate was a hit--the cookies quickly became popular with guests. Ruth shared the recipe when asked. Local newspapers published it.  And she included it in the 1938 edition of her “Tried and True Recipes” cookbook.

Nestle’s saw sales of its semisweet chocolate bar jump dramatically in New England--especially after the cookie was featured on a local radio show.  When Nestle discovered why, they signed a contract with Ruth Wakefield, allowing Nestle to print the recipe on every package.

Nestle began scoring its semisweet chocolate bar, packaging it with a small chopper for easy cutting into morsels. The result was chocolate “chips”--hence the name.

In 1939, Nestle introduced semisweet morsels. Baking Toll House Cookies became even more convenient, since you didn’t have to cut the chocolate into pieces.

Nestle included the Toll House Cookie “backstory” and the recipe in booklets promoting their semisweet chocolate.

During World War II, Nestle encouraged people to send Toll House Cookies to soldiers. For many, it was their first taste of a chocolate chip cookie--its popularity spread beyond New England.

The challenges posed by COVID-19 have inspired us to figure out new ways of working — and also of playing. Our entertainment is now focused on what can be enjoyed in and around our homes.

The past century saw an explosion of entertainment choices to enjoy in our leisure time, and plenty of these remain accessible to help lift spirits and put smiles on our faces. Favorite music, movies and television shows are at our fingertips. Video and board games can be enjoyed. Craft projects await. Reading material surrounds us —found online, downloaded on tablets or discovered on our own bookshelves. Weather permitting, outdoor activities like walking, riding a bicycle or even barbecuing remain accessible — all while maintaining social distancing, of course!

Right now, for many, there is little physical or mental separation between work and leisure. Taking time to savor leisure activities while remaining at home helps renew energy and focus. There are so many ways to stay engaged. Enjoy!

Perhaps the close quarters many of us are currently experiencing may even inspire more face-to-face communication, creativity — and play.

A new group of garments from The Henry Ford’s rich collection of clothing and accessories makes its debut in Henry Ford Museum of American Innovation in our What We Wore exhibit, this time examining how fashion trends can highlight, or manipulate, the human form.

What makes these sleeves puffy?
A stiffened underlining--pleated muslin fabric--helps support the sleeves. Sometimes a “sleeve plumper” was used--down-filled pads that tied on at the shoulder under the dress.

The wide silhouette created by these “leg-of-mutton” sleeves and matching pelerine (small cape that covers the shoulders) not only drew attention to the wearer’s arms, but also emphasized the smallness of her waist!

Who wore this dress?
During the 1830s? We don’t know. Later, Tasha Tudor (1915-2008), author and illustrator of children’s literature, owned the dress.

Tudor admired the objects and rural lifestyle of the early 19th century. She lived in a secluded New England farmhouse with no plumbing or electricity, surrounded by an orchard, rambling garden, and lively farm animals. Tasha Tudor also collected antique clothing--and wore it.

What supported the elaborately draped fabric at the back of this dress?
A bustle--a support of parallel horizontal slats made of wood or steel bent in a half circle. The bustle attached to the body around the waist. A tightly laced corset helped create her extremely small waist.

But how did she sit down? The slats would all collapse together as she sat, then spring back in place when she stood up--maintaining her fashionable silhouette.Between the fabric of the dress and the bustle, garments of this period could be quite heavy to wear!

Who wore this dress?
Mary Stevens (1861-1910), the daughter of wealthy capitalist. The Stevens family lived on Woodward Avenue in Detroit, a street lined with the homes of prosperous Detroiters.

Mary Stevens had a privileged lifestyle. She had the money to purchase finely made fashionable clothing. And led a social life that gave her opportunities to wear it. A few days before Christmas 1884, Mary’s mother gave an elegant reception at the Stevens home--complete with elaborate floral decorations, refreshments, and a full orchestra. Could this be the dress that Mary wore that afternoon?

What undergarment helped achieve this slender, youthful silhouette?
A straight-line, one-piece garment called a corselette. It de-emphasized the bust and smoothed the natural curves of the body--emphasizing the straight, unbroken line of that era’s “boyish” silhouette.

The movement of the uneven hemline, while walking or dancing, would subtly call attention to the wearer’s legs.

Who wore this dress?
Audrey K. Wilder (1896-1979) likely owned this dress.  Audrey attended college--quite unusual for women of her time. She graduated from Albion College, then earned a master’s degree from Columbia University in 1921.

In the late 1920s, Audrey Wilder was appointed Dean of Women at Ohio Northern University. One of her first projects was the creation of the first social hall for women on campus--a place where female students could hold teas, receptions, musicals, and dinners. Those who knew her described Audrey as a “dynamic dean” and a woman “of exquisite grooming.”

What undergarment helped create the “hourglass” silhouette of the 1950s?
Christian Dior’s “New Look”--with its close-fitting hourglass silhouette--dominated the 1950s. This look emphasized a tiny waistline and feminine curves. Longline bras helped slim the waistline and create a smooth line under garments.

This dress, Dior’s “Sonnet” design, also accentuated the waist through the angled side bodice seams, bows at the waist, and rounded skirt.

Who wore this dress?
This dress was custom-made for Elizabeth Parke Firestone (1897-1990), wife of tire magnate Harvey S. Firestone, Jr. Elizabeth felt it her duty to represent her husband, family, and the Firestone Tire and Rubber Company with dignity and grace. She was always flawlessly dressed--whether for informal camping trips, world travel, business functions, or society parties.

Elizabeth had a fine eye for fashion and favored New York and Parisian designers, including Christian Dior. These designers created garments to her specifications, including perfect fit, style, color, fabric, and construction. During the 1950s the New York Dress Institute named Elizabeth one of the "Best Dressed Women in the World.”

Recently, I stopped by the building block “wonderland” that is Towers of Tomorrow with LEGO® Bricks, a temporary exhibit in Henry Ford Museum of American Innovation.

I watched children (and also adults) busily absorbed in designing their own Lego creation - choosing from 200,000 Lego bricks placed within the exhibit as a hands-on activity for visitors. Some kids were likely inspired by the impressive Lego models of famous skyscrapers and other buildings displayed there. Many kids immediately dove into the “bottomless pit” of Lego bricks, jazzed by the opportunity to build something wonderful from their own imaginations.

And children DO love to build things--whether they create imaginary worlds or smaller versions of the real one. Construction toys are quite literally and figuratively “the building blocks of childhood.” Playing with them builds physical and intellectual skills--and encourages creativity. Toy bricks, logs and girders are the stuff of playtime joy!

Over the last 150 years, entrepreneurs have introduced innovative construction toys that have delighted generations of children. Which is your favorite?

After the Civil War, the Charles M. Crandall Company’s building blocks were all the rage. Like Lego bricks, they could be easily and securely linked together in a “thousand and one” ways. By 1879, Crandall offered 28 sets of interlocking blocks and jointed figures.

This “District School” set was a miniature version of a common childhood experience of the era: the one-room rural school. Crandall advertised that children would “laugh over this group of teachers and scholars” as they built the school and arranged the figures. The “District School” had playful appeal, combining entertainment with education--children could learn their alphabet while having fun.

Tombstone cutter Charles Pajeau noticed how much fun his children had sticking pencils into empty thread spools and assembling them into imaginative forms. So, he designed a shorter wooden spool with one hole drilled in the center and a series of holes along the edge. Kids could now build at angles and connect multiple dowels at once. Tinkertoys were born! In 1914, Pajeau started a company to produce and market the toy.

As toy marketer A.C. Gilbert rode the train from New Haven to New York on business, he watched as workers erected an electrical system along the railroad line using steel girders that had been riveted together. This inspired Gilbert to design a construction set for older boys with metal girders, panels, wheels, gears, and pulleys. His marketing spoke directly to boys, encouraging them to build.

Boys used their Erector sets to build small versions of steam engines, Ferris wheels, zeppelins, bridges, elevators, trucks, cranes, and other devices. The toy not only delighted boys--it also appealed to their parents, who appreciated the way Erector sets could introduce their kids to careers in engineering. The company even offered “degrees” from its “Engineering Institute.”

John Lloyd Wright, son of architect Frank Lloyd Wright, invented Lincoln Logs. Introduced in 1916, these sturdy, miniature logs had interlocking notches. Lincoln Logs were named after Abraham Lincoln, who was born in a log cabin.

After World War II, Lincoln Logs got another boost as they became an iconic Baby Boomer toy. In the 1950s, nostalgia for the American West and the frontier had kids crafting log buildings with their Lincoln Log sets. With their nostalgic connection to America’s past, Lincoln Logs were marketed as “America’s national toy.”

Legos, developed in Denmark during the 1950s, first appeared in the United States in 1962. With their small interlocking studs and tubes, Lego plastic bricks held together well - yet could easily be pulled apart. Lego bricks offered “no limits on what you can build.” Two Lego blocks could be joined in 24 different ways. Six blocks--over 100 million ways.

Lego bricks can be assembled and connected to create buildings, vehicles, and even human figures. Though the design and purposes of individual pieces have evolved over the years, each Lego brick--whether made in the 1950s or the present--remains compatible in some way with existing pieces.

Duplo bricks - larger sized versions made for preschoolers - debuted in 1969. They were easier for tiny hands to maneuver.

Over the years, Lego has created Lego sets with a variety of themes, including space, pirates, castles, robots, and the Wild West. They have licensed themes from popular cartoons, films, and video games--like Batman, Harry Potter, and Star Wars.

With their endless creative possibilities, Lego bricks have staying power--and fans worldwide. In 2000, Legos were named “Toy of the Century” by Fortune magazine and the British Association of Toy Retailers.

As a kid, I loved to design and build houses. Growing up, my siblings and I had Tinker Toys, Lincoln Logs, and an Erector set. I rather envied my friend--she had Block City, pre-Lego plastic bricks with architectural details like doors and windows (which Lincoln Logs lacked). My grandmother (who sewed a lot) kept a box full of empty spools and some wood scraps for us to build with--we created imaginary “towns” all over her living room floor. She never seemed to mind.

Spencer Tracy portrayed the inventor in the film, “Edison the Man,” released later that same year. THF58062

Thomas Alva Edison is an American “superhero.” It is not surprising, then, that his life story found its way into the movies during Hollywood’s golden age. It is, in fact, quite fitting, since Edison and an associate were instrumental in the development of early movie technology in the 1890s.

In 1940, Edison was the subject of not one, but two, Hollywood films: “Young Tom Edison,” starring Mickey Rooney, and “Edison the Man,” starring Spencer Tracy. These classic motion pictures were filmed in California. But Henry Ford’s well-known collection of Edison-related buildings and artifacts in Dearborn played a supporting role in MGM’s research for script development and set design.

In February 1939, MGM scriptwriters Dore Schary and Hugo Butler came to Greenfield Village to see the Menlo Park Laboratory and the Edison-related artifacts in the Museum. (Schary and Butler later received an Academy Award nomination for their script for “Edison the Man.”) MGM also wanted the actors playing Thomas Edison in the films to be inspired by their own visits to Dearborn. Rooney arrived on October 23, 1939, just before filming of “Young Tom Edison” began in Hollywood. Tracy came a few days later.

Tracy was deeply impressed by his visit and wrote a letter to Henry Ford, “I am unable to find words to adequately express the deep and lasting imprint my short visit has made upon me…I shall make a supreme effort to do some small justice and no harm to the memory of your dear friend.”

Filming began on “Young Tom Edison” in early November 1939. By Christmas, it was complete, and MGM was planning for the film’s February 10, 1940, premiere in Port Huron, Michigan, where Edison had grown up. The festivities included a train ride from Detroit to Port Huron--the same route traveled by Edison in his youth when he sold candy and newspapers on the Grand Trunk railroad. Artifacts from the Museum added authenticity. Henry Ford loaned the 1858 “Sam Hill” steam locomotive and some train cars for the trip. Among the passengers were the film’s star, Mickey Rooney; Edsel Ford; Thomas Edison’s widow, Mina Miller Edison Hughes; and MGM studio executive Louis B. Mayer. In evening, “Young Tom Edison” premiered at three Port Huron theaters, with Rooney appearing at each.

With the help of photographs and other documentation provided by Greenfield Village staff, MGM built an impressive full-sized version of the Menlo Park laboratory in California for “Edison the Man.” The movie set looked astonishingly like its Greenfield Village counterpart! THF125210

In mid-January 1940, filming began on “Edison the Man.” With the help of photographs and other documentation provided by Greenfield Village staff, MGM built an impressive full-sized version of the Menlo Park Laboratory, with its equipment, furnishings, and rows of bottles on the shelves. The movie set looked astonishingly like its Greenfield Village counterpart.

During the filming, Henry Ford put William Simonds on loan to MGM as a technical assistant. Simonds, a public relations manager for the Village and Museum, had published an Edison biography five years before. During the two-month filming of “Edison the Man” at MGM, Simonds reported back regularly. His letters provide an engaging behind-the-scenes look at the making of this classic Hollywood film.

Simonds told how Rita Johnson’s nervousness at playing her first big role--as Edison’s wife Mary--forced extra takes to complete some scenes. In one instance, Tracy ate five pieces of apple pie during numerous retakes of a scene. Simonds humorously described director Clarence Brown facing a long line of mothers and crying babies to choose an infant to play Edison’s child. He revealed how the stage crew had to scramble to repair the damage when part of the Menlo Park Laboratory set fell over, breaking many of the “chemical” bottles and spilling colored water all over the floor.

Filming of “Edison the Man” wrapped up in mid-March 1940 and it premiered May 16, 1940. There had been talk of holding its premiere in Dearborn, but, at the request of Edison’s son Charles, the film premiered in West Orange, New Jersey, where Edison developed many of his later inventions.

Sailor suits were popular from the 1870s into the 1930s—with short or long pants for boys and skirts for girls. These nautically-themed outfits were usually made of sturdy washable fabrics and, though stylish, allowed kids a bit more freedom of movement.

The Building Blocks of Childhood

Children love to build things--whether they create imaginary worlds or smaller versions of the real one.  Construction toys are quite literally and figuratively “the building blocks of childhood.”  Playing with them builds physical and intellectual skills--and encourages creativity.  Toy bricks, logs, and girders are the stuff of playtime joy!

Entrepreneurs have introduced innovative construction toys that have delighted new generations of children.  Which is your favorite? Estimate: 200,000 attendees. Over 400,000 showed up.

This flag was at Woodstock, too--a witness to this legendary event that reflected the 1960s counterculture movement’s quest for freedom and social harmony.

Flags like this one were provided to vendors, musicians, and technical crew to allow them access to the Woodstock Musical Festival grounds at Max Yasgur’s 600-acre dairy farm in upstate New York during the August 1969 event. They were to fly the flag from their vehicles or attach it to their booths.

Woodstock’s organizers--none of whom were over 27-- billed the event as “An Aquarian Exposition: Three Days of Peace and Music.” Held from Friday, August 15 and extending into the early morning of Monday, August 18, the music festival featured 32 iconic performers including Joan Baez, Creedence Clearwater Revival, Janis Joplin, The Who, the Grateful Dead and Jimi Hendrix.

An Extraordinary Event Creates Enormous Challenges

There was a lot that went right with Woodstock. And many things that didn’t. The free-spirted and peaceful audience was filled with excitement and the musicians turned in electrifying performances. But the inexperienced organizers found their planning for this unprecedented event enormously inadequate--especially since they had to find a new venue only a few weeks before the concert.

The original location--an industrial park near Woodstock, New York--pulled out only a month and a half before the event.  Fortunately, two weeks later Max Yasgur agreed to rent his Bethel, New York farm as the new venue. Nathan’s Hot Dogs--Coney Island’s famous vendor--pulled out when the location of the festival was moved.  Two weeks before the concert, the organizers hired Food for Love, a trio with little experience in the food business. Larger food-vending companies hadn’t wanted to take on Woodstock--no one had ever handled food services for such a large event. Many were reluctant to put in the investment required--what if the festival didn’t draw enough of a crowd to make a profit?

Woodstock’s organizers had told the Bethel authorities that they expected no more than 50,000 people. As the event drew near, with 186,000 advance tickets sold, 200,000 concertgoers seemed a more likely estimate. The organizers then hurriedly tried to bring in more toilets, more water, and more food. Woodstock would ultimately draw an inconceivable number--over 400,000 concertgoers.

The roads around Bethel became jammed for miles with people heading to the concert. Many abandoned their vehicles and made the long walk in. The plugged roads would also make it extremely difficult to get needed supplies in.

The stage, parking lots, and concession stands were barely finished in time for the event. Concert-goers started arriving two days before--with the ticket booths and gates still uncompleted. Since people were able to just walk in, the organizers were forced to declare it a free concert--creating a monumental debt for them. (Though profits from a soundtrack and movie made from films of the Woodstock Festival would help bring down the debt.)

Most concertgoers arrived expecting to be able to purchase food. Food for Love concessions were quickly overwhelmed.  Food became very hard to find. The Hog Farm, a West Coast commune hired to help with security, stepped in to help. They provided free food lines serving brown rice and vegetables--and granola. For some of the crowd, granola was nothing new. But for many it was. Granola would soon become the iconic food of the hippie era.

When the people of Sullivan County, where Yasgur’s farm was located, heard reports of food shortages, they gathered thousands of food donations, including 10,000 sandwiches, as well as water, fruit, and canned goods. Concertgoers who had brought their own food shared what they had with others.

It rained off and on during the event, interrupting or delaying performances--and creating a sea of mud. There weren’t enough receptacles for garbage.  People waited an hour to use one of the portable toilets--then finding it an extremely unsanitary experience when they finally reached the front of the line.

Yet--despite unbelievably crowded conditions with wall-to-wall concertgoers, massive traffic jams, serious food shortages, no running water, no telephones, no electricity (except for the performance stage--and even that was sketchy at times), lack of sufficient restroom facilities, and the muddy quagmire--Woodstock was a place of communal peace and sharing for the three days of the festival. There were no reported incidents of violence among this gathering of over 400,000 people.  

What Really Mattered

In the end, Woodstock wasn’t really about the food, the weather, or even the lack of creature comforts. For many who attended, Woodstock was about experiencing three days of legendary rock and roll music, being part of a peaceful community with hundreds of thousands of other young people, and immersing yourself freely and fully in the moment.  (And, yes, free love and drugs in addition to rock and roll.) The Woodstock concert logo on this flag--the guitar and dove of peace--sums up the idealism of many of Woodstock’s concertgoers.  

This flag’s faded and tattered appearance seems to suggest the logistical challenges of Woodstock. But it is more likely that its owner displayed this treasured keepsake for years after--the flag couldn’t fade this much or get this tattered in just three days. Instead, this flag attests to the eternal staying power of Woodstock as a cultural landmark for an entire generation of American youth--and for the nation.  

Woodstock captured, vividly and indelibly, the spontaneity and free spirit of the counterculture movement of the 1960s--and its vision of freedom and social harmony that would ignite change in American society during the coming years.

Woodstock has left its “mark”--not only in memory--but in archeology. Binghamton University’s archaeology team can really “dig it.” In 2018, they determined the location of the stage. By analyzing rocks and vegetation, they also located the area of the vendors’ booths, known as the Bindy Bazaar.

It’s not every day that you get to see a newly acquired artifact in action – in Greenfield Village just weeks before the opening of the 2019 season.

Meet the 1971 Wooster, Ltd. Sno-Bob, recently acquired by The Henry Ford. A Sno-Bob, also referred to as a ski bike, ski bob, or ski toy, is a bicycle frame attached to skis instead of wheels, or sometimes to a set of foot skis. The origins of bicycle-ski contraptions like the Sno-Bob date back to the mid-1800s. Equipped with real skis and a steering system to give the rider more control than a standard sled, the Sno-Bob is a unique offering in the world of winter toys.

The Sno-Bob isn’t just a fun winter-themed toy, it’s a bit of a rare find for our collections. As a society, we don’t buy as many snow toys to begin with, let alone save them to be possibly donated to a museum in the future. The Sno-Bob also has a connection to the Beatles, too: those loveable Liverpudlian mop tops ride Sno-Bobs in the Austrian Alps during the “Ticket to Ride” sequence in Help!, their second movie.

While not quite the Austrian Alps, you can see our Sno-Bob in action in Greenfield Village earlier this winter as Conservator Cuong Nguyen takes it out for a spin. While we generally don’t “play” with the artifacts in our collection, we feel that this toy is unique enough to justify video documentation showing how it’s used. (We’re fortunate that the weather cooperated with our plans this winter.)

With mail order catalogs, rural Americans could choose from among a much wider variety of goods than at their local general store. THF119939 and THF115221

Today, shopping opportunities are everywhere—as a way to purchase things we need, as well as leisure time entertainment. We cruise the mall, trod the aisles of big-box stores, browse the shelves of trendy boutiques, roll our carts down the grocery store aisle, stop off at the convenience store, flip through store catalogs delivered to our door, and shop online. We can even shop from the convenience of our smartphone or tablet. Shopping is now a 24-7 opportunity filled with endless choices of goods made all over the world.

During the late 19th century, things were quite different. Most Americans lived on farms or in small villages--shopping choices were limited. Yet, the advent of mail order shopping was opening up a world of new possibilities.

Shopping Locally
Where did most rural people shop during the late 19th century? Usually the small stores located at a nearby village or town or perhaps a general store located at a country crossroads.  These stores provided a narrow selection of items that served the needs of the locals, yet offered shoppers the tactile experience of handling the goods before deciding to purchase. Factories were turning out consumer goods of all kinds, advertising trumpeted the merits of the products to potential customers, and railroads made it easier to get those goods to rural stores as well urban ones—so rural shoppers in America’s hinterland could obtain some of the same or similar items found in the city. 

Still—small town shopkeepers couldn’t afford to stock an endless variety of merchandise to broaden their customers’ choices. So, instead of selecting from dozens of shoe styles or tableware patterns, or printed fabric designs, rural customers often made their choices from whatever goods were at hand in the local merchant’s store.

Mail Order Shopping Debuts
During the final decades of the 19th century, America’s farmers developed a growing discontent towards institutions they felt were stealing too large a share of their hard-earned profits: “middlemen” like the grain elevator operators who they felt were paying too low a price for their crops and the storekeepers who they felt charged them too high a price for the goods they bought at retail. Farmers organized themselves into “the Patrons of Husbandry,” also known as the Grange, to protest these inequities as well as seek opportunities to form cooperatives through which they could purchase goods at wholesale prices.

Aaron Montgomery Ward of Chicago recognized that his innovative idea for direct-mail marketing meshed well with this growing discontent on the part of farmers. In 1872, Montgomery Ward & Company launched what would become the first general mail order company in American history.  Advertising his company as “The Original Wholesale Grange Supply House,” Ward stated that the firm sold its goods to “Patrons of Husbandry, Farmers and Mechanics at Wholesale Prices.” His recipe for success—high volume, a wide selection of goods, ease of handling, and low prices—enabled Ward to extend the advantages found in urban marketplace directly to rural customers.

As Montgomery Ward & Company’s mail order business quickly grew, other companies joined in. The other mail order giant, Sears, Roebuck and Company, also located in Chicago, began offering mail order in 1888.  By 1900, these two mail order houses were the two greatest merchandisers in the world. Countless other firms offered a variety of goods from ready-made clothing to hardware and farm equipment, using the direct-marketing of mail order to extend their reach to customers all over the nation.

Mail order catalogs brought city and country together. The enticing products shown on their pages represented the new and modern to their rural readers, promising higher standards of living and material progress through the attractive goods and labor-saving devices displayed there. Mail order catalogs offered rural residents a “taste” of the urban experience, offering goods found in the shops and department stores that blossomed in the commercial districts of America’s burgeoning cities. Catalogs, of course, broadened the merchandise selection for some city people as well.

A Cornucopia of Material Delights
Flipping through these mail order catalogs brought a visual feast of tens of thousands of products—some satisfying needs and some gratifying wants.  For a farm family whose lives and daily activities brought little variety, these catalogs opened a world of new material possibilities:  fashionable ready-made clothing, hats and hat trimmings, jewelry of all kinds, sewing machines, cook stoves, and hardware for use on the farm or stylish hinges to update farmhouse doors. Even carriages and automobiles could be shopped for by mail.

The photograph above depicts a middle-class family from a farm or small town surrounded by the mass-produced goods that provided an attractive, comfortable lifestyle.  Many of the items could have been purchased from a mail order catalog. (Keep in mind that, while rural residents might have access to many of the same goods, they often had far less spending power than urban America.)

Delivering the Catalogs—and the Goods

Mail order catalogs came to farmers—not surprisingly--through the mail. Yet, for many years, that did not mean convenient delivery to their doorstep. Though city dwellers had enjoyed free home delivery of mail since 1863, rural residents still had to pick up their own mail at the nearest post office—even though they paid the same postage as the rest of the nation. Bad roads and distance often meant that farmers rarely picked up their mail more than once a week. So placing a catalog order could take longer for farm folk than city dwellers.  A farm family might pick up a catalog on a trip to town one week, then place the order the next time someone went to town. Payment for mail orders was made by money order, purchased through the post office.

In 1896, the success of mail order retailing helped encourage the introduction of rural free delivery, which began as an experiment with mail being delivered at no charge to customers on a few rural routes.  Delivering mail throughout the countryside soon proved successful and sustainable, and additional routes continued to be added.  In July 1902, rural free delivery became a permanent service. Now all rural Americans enjoyed mail delivery to their homes, opening their mailboxes to find not only letters from family and friends, but a growing number of mail order catalogs presenting enticing goods for their consideration. 

How did merchandise ordered get to the person who ordered it? Before the advent of rural free delivery, people could pick up small packages at the post office. Private express companies delivered larger packages shipped to the nearest railroad station, transporting them to the customer’s home. Farmers might use their own wagons to transport goods shipped by rail to them.

After the beginning of rural free delivery, mail carriers delivered packages weighing up to four pounds to their customers’ mailboxes. By law, heavier packages had to be delivered by private express companies.  

In January 1913, the U.S. Postal Service established parcel post—now goods could be delivered directly to homes. It was an instant success, boosting mail-order businesses enormously. During the first five days of parcel post service nearly 1,600 post offices handled over 4 million parcel post packages. Within the first six months, 300 million parcels had been delivered. Weight and size limits were gradually expanded. By 1931, parcel post deliveries included packages weighing up to 70 pounds and measuring up to 100 inches.

Something Gained, Something Lost
While catalog shopping brought variety and convenience to rural Americans during the late 19th and early 20th century, there was an important trade-off. The face-to-face communication and personal relationship that had existed between a local storekeeper and his customers was eroding, helped along by national advertising which told potential customers what to buy—rather than customers seeking the advice of the storekeeper. Too, stores became increasingly self-serve. This trend toward less personal, “non-local” shopping continued to grow throughout the 20th century for rural and urban people alike, involving not only orders by mail, but by phone and, eventually, the internet.  In the 21st century, sales of consumer goods increasingly take place online. 

Yet, more recently, people have come to value the attentive personal service offered and unique goods stocked by many local retailers. Many shoppers combine the advantages of shopping online for the wide variety goods available there, with the personal touch and service-oriented experience of shopping locally. Encouraging this shop-local trend are national campaigns like Small Business Saturday, which takes place Thanksgiving weekend, encouraging shoppers to patronize small retailers.

Microwave ovens gained popularity in the 1970s, becoming all but standard in American kitchens by the mid-1980s. These new appliances cooked food differently than conventional stovetop or oven methods, which worked by surrounding food with heat. In a microwave oven, electromagnetic waves caused food molecules to vibrate, creating heat that transferred from the outside to the center of the food.

Foods cooked much faster in microwave ovens than in conventional ones. For example, microwaving reduced the cooking time for a baked potato from 75 minutes to just four. And frozen meat pies, which could take 45 minutes to bake, would be ready after nine minutes in the microwave.

This time-saving cooking method promised convenience, but it took some getting used to, requiring adjustments to cookware and cooking techniques. Glass and plastic transmitted electromagnetic waves in microwave ovens, but metal reflected them, causing sparks that could damage the appliance or even cause a fire. Manufacturers had to develop heat-resistant cookware and cooking utensils safe for use in the microwave.

In addition to purchasing microwave-safe cookware, Americans needed to learn new cooking techniques. Familiar foods required different preparation -- eggs had to be removed from shells and stirred to break the yolks, and potatoes needed to be pierced before cooking. People also had to change their expectations, as microwave cooking didn’t brown or crisp many foods the way conventional methods did. Meat could be cooked in the microwave -- with varying results. Specialized browning skillets provided some familiar texture and flavor to meats that would otherwise seem limp and unappetizing.

Microwave manufacturers included instruction manuals and recipe suggestions with the ovens they sold. Cookbooks also helped home cooks adjust. Some offered information on how to convert conventional recipes for microwave cooking, while others focused solely on recipes created specifically for the microwave. Two booklets from the collections of The Henry Ford offer a look at the early decades of microwave cooking in America.
